Valentine's Day Duo

Is it hard to remember life before kids? Use this Valentine's day to rekindle your relationship.

If you have a sitter, have a special date night: dinner or just dessert! Can't get out? After putting the kids to bed (hopefully early), enjoy a candlelit dessert. Buy some fine chocolates or use my easy recipe:
Chocolate truffles

Truffles

1/2 cup heavy whipping cream
2 tablespoons unsalted butter
1 tablespoon light corn syrup
8 ounces semisweet or milk chocolate (use GOOD quality chocolate- Lindt, Ghiradelli, Guittard, Scharffen Berger, amongst others).

coating- ground nuts, cocoa powder, coconut flakes, etc...

Combine cream, butter and corn syrup in small pot; bring to a simmer over low heat. Remove from heat. Add chocolate to cream and whisk until smooth. Cool for 2 to 3 hours at room temperature. Once cooled, use a melon baller or small ice cream scoop to gather a small ball of chocolate. Place on a lined cookie sheet and refrigerate for 30 minutes. Once chilled and firm, roll the chocolate in hand until round, then roll in coating of choice.

Truffles will keep for weeks in the refrigerator if stored in an air-tight container. Serve at room temp.
