Crustless Broccoli & Swiss Quiche

Crustless Broccoli & Cheese Quiche
Here's a tasty and healthy recipe mom can enjoy this Mother's Day.
You'll need...
5 cups steamed broccoli florets
1 garlic clove grated or minced
1 1/4 cups skim milk
1 cup reduced-fat Swiss cheese
2 teaspoons Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
4 large egg whites (or egg substitute), lightly beaten
2 large eggs, lightly beaten
2 tablespoons grated Parmesan
Cooking spray
To make...
  • Preheat oven to 350°.
  • Place broccoli into a 9-inch pie plate coated with cooking spray. Combine the remaining ingredients, minus Parmesan, in a large bowl. Pour milk mixture over broccoli mixture; sprinkle with Parmesan. Bake at 350° for 40 minutes or until top is golden and a knife inserted in center comes
